A food tour with a difference! Learn about the various cultural and culinary influences that have shaped the Vietnamese diet over hundreds of years. You will follow the journey of rice from the paddy field to the authentic noodle ‘factory’, before following its paths to the local market where you can see it sold and sample the noodles in the authentic market setting. Likewise, visit a bean sprout producer and learn about this ancient tradition before seeing them for sale on local stalls. You’ll also sample rice cakes with Mung bean curd, local deserts freshly cooked in market stalls. Later in the tour meet one of the few sellers of Chinese sesame soup and learn about the history of this interesting family, before sampling Banh Mi and admiring the French influence. Lastly, try a Vietnamese coffee! On the way learn about Family Shrines and traditions as well as a host of other fascinating facts about our wonderful city.

Our tour will begin on the farm with a welcome drink. While relaxing in a shaded part of the farm, I will present our community movement and teach you about how we grow our organic produce. After enjoying the welcome drink, we will walk along the community farm and learn about organic farming and the unique UNESCO- protected Subak System in Bali. During the farm tour, we will pick the ingredients that we are going to use during the cooking class for a true farm to table cooking experience. Once we arrive at the centre of the community, Mai Organic farm, we will drink a refreshing juice made with vegetables and fruit from our local farms. Following the drink, we will prepare six Balinese dishes, such as tuna sate and corn fritters. Students are able to participate as much or as little as they would like. Introducing with tea ceremony Matcha green tea and Wagashi sweets Next we'll watch a real Japanese katana—a traditional sword used by the samurai of ancient and feudal Japan. Then you'll learn how to handle it with unsharpened katana. We'll also do a traditional Zen meditation. It's called "Rituzen". After doing meditation, you will be calm mind and you can cut one bundle of straw with real sword. Through using with real katana yourself, you can feel one part of swordsmanship as samurai. Lastly, you'll watch a performance using real katana by host. This experience has no flashy production, but you can feel the "real". Our practice will take place in a quiet corner of Lumphini Park, right in the center of Bangkok. We will start the session with meditation and Pranayama (breathing exercises), moving on to asana flows. During the retreat, we will be performing healing and strengthening exercises.
